Fearing's — Menu Guide

By Firoz Khan · FK Digital Media

Fearing's is Dean Fearing's flagship at The Ritz-Carlton, Dallas — the kitchen of the chef widely called the father of Southwestern cuisine (and author of The Texas Food Bible), who previously ran the legendary dining room at The Mansion on Turtle Creek. The restaurant earned a Michelin Recommended listing in both editions of the Michelin Guide Texas (2024 and 2025 — Recommended, not starred), and landed on OpenTable's Top 100 Hotel Restaurants for 2025. Below is our independent walkthrough of the menu, with prices taken from the official Ritz-Carlton dinner menu PDFs (crawled in 2026) and dated honestly. Everything is written in our own words.

Dinner signatures

Prices below are from the official Ritz-Carlton dinner menu PDF (crawled around August 2026; the restaurant's menus are seasonal, so treat these as era-dated):

  • Dean's Tortilla Soup — $17: the signature starter Fearing built his reputation on.
  • Southwest Sampler — $29: crab cakes, a BBQ short rib enchilada, and crispy two-bite lobster tacos — the greatest-hits plate.
  • 'MOTC' Lobster Taco — $28: a nod to his Mansion on Turtle Creek years.
  • Texas Wagyu Beef Carpaccio — $26; seared Hudson Valley foie gras — $28; Barbequed Gulf Oysters 'Rockefearing' — $22.
  • Maple/Black Peppercorn Soaked Buffalo Tenderloin — $61: the headline game-meat dish.
  • BBQ Spiced Beef Filet & Chicken-Fried Maine Lobster — $63: the surf-and-turf showpiece.
  • Achiote Glazed Broken Arrow Ranch Nilgai Antelope and Lamb Loin 'Au Poivre' round out the wild-game program; Pheasant/Bacon Roulade — $52.

Mesquite-grilled steaks

From an earlier 2026 revision of the official menu (crawled around May 2026):

  • R-C Ranch Wagyu Tenderloin, 7 oz — $65; NY Strip, 10 oz — $79; Ribeye, 16 oz — $91, all mesquite fire-grilled.
  • Add-ons: cognac peppercorn sauce $3; chicken-fried lobster (half tail $14, full $26); truffle lobster mac n' cheese $32.

Lunch

From the official lunch menu (crawled around April 2026): The 2121 Cobb Salad with Chicken Fried Lobster — $33 and Tortilla Soup — $17.

What we'd order

If we had one dinner here, this is how we'd play it:

  • Start with: Dean's Tortilla Soup ($17) — skipping it at Fearing's would be like skipping the beignets at Café du Monde.
  • The sampler play: the Southwest Sampler ($29) covers three signatures in one plate.
  • The splurge: the Buffalo Tenderloin ($61) or the BBQ Filet & Chicken-Fried Lobster ($63).
  • Steakhouse mode: the 16 oz mesquite-grilled ribeye ($91) with truffle lobster mac n' cheese ($32).
  • After dinner: a nightcap at the Rattlesnake Bar, open late.

Planning your visit

  • Book ahead — the restaurant itself says reservations are highly recommended (214-922-4848).
  • Michelin nuance: Fearing's is Recommended in the Michelin Guide Texas, not starred — still a meaningful distinction in a state with very few starred rooms.
  • Two restaurants, one chef lineage: Fearing ran The Mansion on Turtle Creek's kitchen for years before opening here — pairing this guide with our Mansion Restaurant guide makes a great Dallas dining weekend.
  • Parking: valet is available at The Ritz-Carlton.
