Prime 54 is the Fontainebleau Miami Beach's own modern steakhouse, located off the grand Chateau lobby. Executive chef Michael Paley (formerly of Klaw Miami — Eater/Infatuation's Best New Restaurant 2022 — and Amara at Paraiso — Eater's Restaurant of the Year 2018) runs the kitchen, and the two-story glass-enclosed wine tower — a 1,400-label vault per Haute Living (October 2025) — is the room's signature. Below is our independent walkthrough with prices from the official hotel menu page (fetched October 2026). Everything is written in our own words. Note: a 20% service charge is added to all checks.

Reported by the official restaurant page: 6:00–10:00 PM Sunday–Friday, 6:00–11:00 PM Saturday. OpenTable's listing shows the restaurant closed Wednesday (Mon/Tue/Thu/Sun 6–10 PM, Fri/Sat 6–11 PM). The $65 prix-fixe menu page itself says "Only offered Sunday-Friday (Closed Wednesday)," so plan around Wednesday being dark. Dress code: Smart Casual.

What we'd order

If we had one meal here, this is how we'd play it:

  • The value move: the $65 prix fixe — three courses of steakhouse classics on a Sunday–Friday night.
  • The steak move: the 30–45-day dry-aged bone-in NY strip ($85) — or the tomahawk ($230) to share.
  • The seafood move: charred octopus ($28) to start, Spanish sole ($72) as the main.
  • The room move: arrive early and let the wine tower do its thing — 1,400 labels.

Planning your visit

  • Book via OpenTable — note the listing still sits on the legacy "stripsteak" slug; it serves Prime 54's inventory.
  • Wednesday is dark — the one night the restaurant is closed.
  • Dress code: Smart Casual — "many guests dress up a touch for anniversaries" per OpenTable.
