Tullibee is the restaurant and bar of the Hewing Hotel in Minneapolis's North Loop, a Nordic-inspired farm-to-table room built around a wood-fired hearth and hyper-local sourcing, run by executive chef Nathan Kim. Two things to get straight first: Tullibee is not the rooftop — the Rooftop at Hewing Hotel is a separate venue — and the menu changes daily, so the current official page publishes no itemized prices at all. This guide covers the format, the hours, and era-dated prices from official past menus, all labeled. Everything is written in our own words.

Per the official Hewing Hotel page, fetched 2026-10-01: breakfast daily 7:00–11:00 AM; lunch Mon–Fri 11:00 AM–2:00 PM; dinner daily 5:00–10:00 PM; brunch Sat–Sun 8:00 AM–2:00 PM. (OpenTable lists Friday/Saturday dinner to 11:00 PM — the official page is canonical here.) The separate Rooftop venue runs daily 5:00 PM–midnight.

What we'd order

If we had one dinner here, this is how we'd play it:

  • Start with: whatever the hearth is doing that night — the koltboard was the 2023 signature, and the format persists.
  • The sea play: trout or walleye — Nordic rooms do cold-water fish best.
  • The land play: the half duck or the dry-aged strip, historically the room's anchors.
  • The experience: the Chef's Choice tasting ($75pp in the 2023 PDF) if the table wants the full tour.
  • After dinner: head upstairs — the Rooftop is a separate venue, but it's the natural second act.

Planning your visit

  • The menu is daily: treat the prices above as era-dated shape, not today's numbers — ask when you book.
  • Not the rooftop: Tullibee is the ground-level restaurant and bar; don't book it expecting skyline views.
  • Dinner series: the hotel runs ticketed "Kindling" dinner-series events (next noted: Oct 29, 2026, via Resy) — worth checking.
  • Parking: valet is available at the Hewing Hotel.
