Terra — Menu Guide
By Firoz Khan · FK Digital Media
Terra is the dining room of Four Seasons Resort Rancho Encantado Santa Fe at 198 State Road 592 — a high-desert resort wrapped around Sangre de Cristo views. Executive chef Andrew Fox cooks contemporary American with a northern New Mexican heart: red and green chile, bison, blue corn, and piñon, in an art-filled room with a heated patio. The official breakfast menu carries real prices; dinner prices aren't published. Everything is written in our own words.

Hours
One honest flag: the sources disagree. Per OpenTable (September 2026) — which we treat as primary: breakfast daily 7:00–11:30 AM; lunch daily 12:00–2:30 PM; bar daily 12:00–10:00 PM; happy hour daily 3:00–5:00 PM; dinner daily 5:30–9:00 PM, with live music Friday–Saturday 6–8 PM. The official Four Seasons page shows oddly labeled hours (including a "breakfast 11:00 AM–2:30 PM" that looks mislabeled), so confirm directly when you book.
Signature dishes
The dishes the resort and its guests keep naming:
- Steak For Two: the official "Signature Dish" — a tomahawk-style steak for two with grilled asparagus and green-chile mac and cheese.
- Pepita crumble seared scallops: a frequent guest favorite (per OpenTable).
- Lamb shank: praised in August 2026 verified reviews.
- Poblano leek soup: praised in August 2026 verified reviews.
- Green-chile bison meatballs: a TastingTable-noted signature (2023).
- Breakfast standouts (official menu): Beef Sunrise Burrito, Santa Fe Style Chilaquiles, Encantado Sunrise Hash, Prickly Pear & Granola Parfait.
Official prices (breakfast, March 2026 era)
These are the restaurant's own figures from its official breakfast menu PDF — March 2026 era. No dinner prices are published anywhere:
- Breakfast: oatmeal $14; eggs Benedict $24; beef sunrise burrito $26; chilaquiles $23; Encantado sunrise hash $32; Encantado breakfast $28; avocado toast $17; prickly pear parfait $12; fresh-squeezed OJ $9.
- Dinner: no published prices found — OpenTable lists a typical band of $31–$50 per person (Sep 2026).
What we'd order
If we had one dinner here, this is how we'd play it:
- The splurge: the Steak For Two — it's the official signature for a reason.
- The starter: the pepita crumble seared scallops.
- Happy hour: 3–5 PM daily at the Terra Bar, on the patio if the weather holds.
- Breakfast: the chilaquiles or the sunrise hash — both official-menu items with real prices.
Planning your visit
- Confirm hours when you book — OpenTable and the official page disagree on breakfast; OpenTable's 7:00–11:30 AM looks like the real one.
- It's a drive from the Plaza: Rancho Encantado sits north of Santa Fe proper — plan a car, not a walk.
- The patio is the point: heated, with Sangre de Cristo views — ask for an outside table.
- No published dinner prices: budget around the $31–$50 band and ask when reserving.
