Jean-Georges Vongerichten's modern steakhouse at ARIA is the thinking person's Strip steakhouse: steaks grilled over sustainable apricot wood and mesquite, finished with rendered beef fat, in a black-and-gold Art-Deco-inspired dining room entered through an Art-Deco gate. The Japanese certified beef program — F1 wagyu cuts plus Hyogo Prefecture A5 Kobe, one of very few US restaurants licensed to serve it — is the draw, alongside tableside-carved shareable cuts like the 42 oz wagyu tomahawk. Note the distinction: this ARIA steakhouse is not the Michelin-starred "Jean-Georges" at Waldorf Astoria Las Vegas — a different restaurant.
